no wheat, sugar, dairy granola

[subscribe2]I love this recipe because it’s wheat, sugar & dairy free. I don’t sneeze, cough, or (blush) get diarrhea from eating it. So, it’s only fair that I share, right?

Perfect Granola no wheat no sugar! This recipe will fill up your family for hours! Can be served with Almond Breeze (this is the best milk substitute/no soy either).

Mix together
in large bowl:

8 cups
rolled oats

1 cup rice
flour

1 to 2 cups
chopped nuts and seeds

1 cup
natural coconut

2 tsp.
cinnamon

In medium bowl, mix the following until smooth:

1 cup honey

1 cup peanut butter (I prefer to cut this down from 1 c. to ½ cup because the pnt butter can get a bit overpowering. But, if you have kids, the pnt butter will help keep them filled up from breakfast right up to lunch!)

1 cup vegetable oil…canola, etc.

2 tsp.
vanilla (or maple)

Pour wet ingredients into dry and mix very thoroughly. Spead onto cookie sheets. Bake two batches at a time in oven @300 F  without turning until golden on both sides. (I turn it).

Check every ten min. to make sure it’s not burning on the edges in case your oven co0ks faster/higher.  If so, lower the temp of
oven. Bake for 20-30 minutes-check to see if it’s getting brown on bottom. If brown on bottom but not top, put pan on top shelf of oven.

Turn out onto parchment paper to cool and store in tight containers.
